  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

This refreshing Avocado Tomato Cucumber Salad with Lime Vinaigrette is a delightful blend of creamy avocados, juicy tomatoes, and crunchy cucumbers. Perfect for warm summer days, it’s a healthy and vibrant addition to any meal.

Ingredients

Scale
  • 2 ripe avocados, diced
  • 2 cups cherry tomatoes, halved (or 2 large tomatoes, diced)
  • 1 large cucumber, peeled and diced (or unpeeled if preferred)
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • Salt and pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 teaspoon lime zest
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin (optional)
  • Salt and pepper, to taste

Instructions

  1. Begin with preparing the ingredients. Dice the avocados, halve the cherry tomatoes or dice the large tomatoes, and cut the cucumber into small pieces. This should take about 5-7 minutes.
  2. Finely chop the red onion and cilantro, if using. These steps should take about 3 minutes.
  3. Add the prepared ingredients to a large bowl: avocados, tomatoes, cucumbers, red onion, and cilantro. Gently mix to avoid mashing the avocados. This should take about 2 minutes.
  4. Now prepare the dressing. In a small bowl, mix the olive oil, lime juice, lime zest, honey or maple syrup, garlic powder, and cumin (if using). Stir well until everything is combined. This should take about 2 minutes.
  5. Pour the dressing over the salad and gently mix everything so that the dressing is evenly distributed. Be careful not to mash the avocados. This takes about 1-2 minutes.
  6. Season the salad with salt and pepper to taste. This should take no longer than 1 minute. Adjust the spices according to your preference.
  7. Serve the salad immediately or let it chill in the refrigerator for a short while to allow the flavors to meld. If serving chilled, let it sit for about 10 minutes before enjoying.
