Ingredients
Scale
- 2 ripe avocados, diced
- 2 cups cherry tomatoes, halved (or 2 large tomatoes, diced)
- 1 large cucumber, peeled and diced (or unpeeled if preferred)
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped (optional)
- Salt and pepper, to taste
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 teaspoon lime zest
- 1 teaspoon honey or maple syrup (optional, for sweetness)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin (optional)
- Salt and pepper, to taste
Instructions
- Begin with preparing the ingredients. Dice the avocados, halve the cherry tomatoes or dice the large tomatoes, and cut the cucumber into small pieces. This should take about 5-7 minutes.
- Finely chop the red onion and cilantro, if using. These steps should take about 3 minutes.
- Add the prepared ingredients to a large bowl: avocados, tomatoes, cucumbers, red onion, and cilantro. Gently mix to avoid mashing the avocados. This should take about 2 minutes.
- Now prepare the dressing. In a small bowl, mix the olive oil, lime juice, lime zest, honey or maple syrup, garlic powder, and cumin (if using). Stir well until everything is combined. This should take about 2 minutes.
- Pour the dressing over the salad and gently mix everything so that the dressing is evenly distributed. Be careful not to mash the avocados. This takes about 1-2 minutes.
- Season the salad with salt and pepper to taste. This should take no longer than 1 minute. Adjust the spices according to your preference.
- Serve the salad immediately or let it chill in the refrigerator for a short while to allow the flavors to meld. If serving chilled, let it sit for about 10 minutes before enjoying.
