  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk (or milk with 1 tablespoon vinegar or lemon juice added)
  • 1 cup shredded sharp cheddar cheese
  • 6 strips bacon, cooked crispy and crumbled
  • 2 tablespoons chopped fresh chives (or green onions)
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon dried parsley (optional)

Instructions

  1. Preheat your oven to 220 °C (425 °F) for perfect browning of the rolls.
  2. In a large bowl, combine the all-purpose flour, baking powder, baking soda, and salt. This should take about 1 minute until well mixed.
  3. Add the cold, cubed butter and mix with the dry ingredients until the mixture is crumbly. This takes about 3-5 minutes at medium speed if using a mixer.
  4. Pour the buttermilk into the bowl and stir until the dough just comes together. Be careful not to overmix to maintain a tender texture.
  5. Sprinkle some flour on a clean work surface and turn the dough out onto it. Gently knead it 2-3 times until smooth, ensuring no lumps remain.
  6. Roll the dough out to about 1.5 cm thick, which should take about 2 minutes.
  7. Sprinkle the shredded cheddar, crumbled bacon, chives, and black pepper evenly over the dough.
  8. Roll the dough up from one long side to form a log. This should take about 1-2 minutes.
  9. Cut the log into 2.5 cm pieces and place them on a baking sheet lined with parchment paper, ensuring they have some space between them.
  10. Bake the rolls in the preheated oven for 15-20 minutes until golden brown. They are done when they easily pull away from the sheet and have a nice color.
  11. While the rolls are baking, mix the melted butter with the garlic powder and parsley, which takes about 2 minutes.
  12. Once the rolls are done, remove them from the oven and immediately brush them with the butter mixture. Let them cool for 5 minutes before serving.
