- 200 g broccoli
- 250 g pasta (e.g. penne or fusilli)
- 200 ml cream
- 100 g grated Parmesan
- 1 clove garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
- A pinch of nutmeg (optional)
Instructions
- Cut the chicken breast fillets into small pieces and season them with salt and pepper. Ensure the pieces are even so they cook uniformly, which takes about 5 minutes.
- Bring a pot of water to a boil. Add the broccoli and cook for about 3-4 minutes until slightly tender. Be careful not to overcook it to retain its color and nutrients. Drain and set aside.
- Cook the pasta in the same water according to package instructions until al dente, usually about 8-10 minutes. Reserve some pasta water before draining.
- Heat the olive oil in a large pan over medium heat. Add the finely chopped garlic and sauté for 1-2 minutes until fragrant. Do not let the garlic brown to avoid bitterness.
- Add the chicken pieces to the pan and sauté until crispy and golden brown all over, about 5-7 minutes. Ensure the chicken is cooked through and reaches an internal temperature of 75°C.
- Reduce the heat and pour the cream into the pan. Add the grated Parmesan and a pinch of nutmeg. Stir well to dissolve the cheese and create a creamy sauce, which should take about 3-4 minutes.
- Add the cooked pasta and broccoli to the sauce. Mix everything well so that the pasta is completely coated in the sauce. If the sauce is too thick, you can add some reserved pasta water to achieve the desired consistency.
- Taste the pasta and adjust the seasoning if necessary. Serve hot and enjoy the delicious aroma!
