  • 1/4 cup Light Brown Sugar (firmly packed)
  • 1 1/2 tablespoon All-Purpose Flour

  • 2 tablespoons of Cold Unsalted Butter (cut into 1/4” cubes)
  • 2 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Cinnamon
  • 1 1/2 teaspoon Fine Sea Salt
  • 1/2 teaspoon Freshly Grated Nutmeg
  • 1/2 teaspoon Ground Allspice
  • 1 (15 ounce) can Pumpkin Puree
  • 1 cup Light Brown Sugar (firmly packed)
  • 2/3 cup (equal to 10 tbsp) melted butter
  • 3/4 cup Buttermilk
  • 2 Eggs (slightly beaten)
  • 2 tablespoons of Molasses

Instructions

  1. Preheat the oven to 350° F (175° C) and prepare two muffin pans by greasing them or lining them with muffin liners.
  2. In a small bowl, mix the Granulated Sugar, Light Brown Sugar, All-Purpose Flour, Cinnamon, and a pinch of Salt for the streusel. Use a pastry cutter or fork to work the cold butter into the mixture until well combined. Set the streusel aside in the refrigerator until needed.
  3. In another small bowl, mix all the dry ingredients: 2 1/2 cups All-Purpose Flour, 2 teaspoons Baking Powder, 2 teaspoons Cinnamon, 1 1/2 teaspoons Fine Sea Salt, 1/2 teaspoon Freshly Grated Nutmeg, and 1/2 teaspoon Ground Allspice. Set the bowl aside.
  4. In a large mixing bowl, combine the Pumpkin Puree, 1 cup Light Brown Sugar, melted butter, Buttermilk, slightly beaten Eggs, and Molasses. Whisk all the wet ingredients together until evenly mixed.
  5. Add the dry ingredients to the wet ingredients and stir gently with a sturdy wooden spoon until just combined. Be careful not to overmix to avoid dense muffins. Scrape the sides and bottom of the bowl and stir once more.
  6. Fill the muffin pans about two-thirds full with the batter and sprinkle a generous pinch of the cinnamon-sugar mixture on top. Bake the muffins for 28-30 minutes or until a toothpick inserted in the center comes out clean. They should be golden brown and fluffy.
