- ¼ cup chopped fresh cilantro

Instructions
- Preheat your oven to 220 °C to ensure the fries are crispy from the start.
- Peel the russet potatoes and cut them into even strips, about 1 cm thick for even cooking.
- In a large bowl, toss the potato strips with 2 tablespoons of vegetable oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, and salt and pepper to taste, ensuring all strips are well coated.
- Spread the potatoes evenly on a baking sheet and bake for 30-35 minutes until golden brown and crispy, turning them halfway through for even browning.
- While the fries are baking, heat 1 tablespoon of olive oil in a pan over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until soft and translucent.
- Add the minced garlic, ground beef, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of smoked paprika, and salt and pepper. Cook the meat for 8-10 minutes until fully cooked and browned, stirring regularly to prevent burning.
- For the cheese sauce, melt 2 tablespoons of butter in a small pot over medium heat. Add 2 tablespoons of flour and whisk for about 2 minutes until the mixture is golden brown.
- Slowly pour in 1 cup of whole milk while continuously stirring to avoid lumps. Cook the mixture for 3-4 minutes until it thickens.
- Add 1 ½ cups of shredded sharp cheddar cheese, ½ cup of Monterey Jack cheese, and 1 teaspoon of Dijon mustard. Stir until the cheese is fully melted and the sauce is creamy. Season with salt and pepper to taste.
- Once the fries are done, remove them from the oven and evenly distribute the cooked ground beef on top. Pour the cheese sauce over the fries and beef.
