  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 1 jalapeño, sliced (optional)
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro
  • ½ cup sliced green onions
  • ½ cup diced tomatoes
  • 1 avocado, diced

Instructions

  1. Preheat your oven to 220 °C to ensure the fries are crispy from the start.
  2. Peel the russet potatoes and cut them into even strips, about 1 cm thick for even cooking.
  3. In a large bowl, toss the potato strips with 2 tablespoons of vegetable oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, and salt and pepper to taste, ensuring all strips are well coated.
  4. Spread the potatoes evenly on a baking sheet and bake for 30-35 minutes until golden brown and crispy, turning them halfway through for even browning.
  5. While the fries are baking, heat 1 tablespoon of olive oil in a pan over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until soft and translucent.
  6. Add the minced garlic, ground beef, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of smoked paprika, and salt and pepper. Cook the meat for 8-10 minutes until fully cooked and browned, stirring regularly to prevent burning.
  7. For the cheese sauce, melt 2 tablespoons of butter in a small pot over medium heat. Add 2 tablespoons of flour and whisk for about 2 minutes until the mixture is golden brown.
  8. Slowly pour in 1 cup of whole milk while continuously stirring to avoid lumps. Cook the mixture for 3-4 minutes until it thickens.
  9. Add 1 ½ cups of shredded sharp cheddar cheese, ½ cup of Monterey Jack cheese, and 1 teaspoon of Dijon mustard. Stir until the cheese is fully melted and the sauce is creamy. Season with salt and pepper to taste.
  10. Once the fries are done, remove them from the oven and evenly distribute the cooked ground beef on top. Pour the cheese sauce over the fries and beef.
  11. Serve the French Fry Nachos immediately, garnished with your favorite toppings such as jalapeños, sour cream, fresh cilantro, green onions, tomatoes, and avocado. Enjoy your delicious dish!
