  • 1/2 cup finely chopped mushrooms (shiitake or button)
  • 1/4 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 6 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon chili paste (optional, adjust to taste)
  • 1 cup snap peas, trimmed
  • 1 cup baby spinach
  • 1/4 cup chopped cilantro (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a bowl, combine the flour, salt, and baking powder. Gradually add water and 1 tablespoon of vegetable oil. Knead the dough until smooth, about 5 minutes. Wrap in plastic wrap and let it rest for 15 minutes.
  2. In a large bowl, mix the napa cabbage, carrots, mushrooms, green onions, garlic, and ginger. Season with soy sauce, sesame oil, salt, and pepper. Mix well and set aside.
  3. Roll out the dough on a floured surface and cut out circles using a cutter or glass. Place 1 tablespoon of filling in the center of each circle and fold the edges together. Pinch the dumplings to seal them well.
  4. In a large pot, bring the vegetable broth, soy sauce, sesame oil, rice vinegar, and chili paste (if using) to a boil over medium heat. Reduce the heat after about 5 minutes.
  5. Carefully add the dumplings to the broth and cook for about 10 minutes until they are cooked through and float to the surface. Be careful not to let the broth boil too vigorously to avoid breaking the dumplings.
  6. After 10 minutes, add the snap peas and spinach to the broth and simmer for another 3-5 minutes until the vegetables are tender but still crisp.
  7. Serve the soup in bowls, garnished with cilantro and sesame seeds, and enjoy hot.
