- 500 g mushrooms
- 1 onion
- 2 tablespoons olive oil (or 30 g butter)
- 400 ml cream (or cream substitute)
- 1 tablespoon flour (or cornstarch)
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon paprika
- 800 g gnocchi
- 1 tablespoon butter or oil
- some chives or spring onions
Instructions
- Peel and finely dice the onion. This takes about 2 minutes.
- Thoroughly clean the mushrooms and slice them evenly. This should also take about 2 minutes.
- In a large pot, heat the olive oil (or butter) over medium heat. After about 1-2 minutes, the oil should be hot enough to add the onion.
- Add the onion to the pot and sauté over medium heat until translucent, which takes about 3-4 minutes. Be careful not to let it brown too much.
- Add the mushrooms to the pot and sauté for another 4-5 minutes until they are soft and have released some liquid. You will notice they take on a golden color.
- Deglaze with the cream and stir well. The sauce should now take on a creamy consistency.
- Mix the flour with 2 tablespoons of water in a small bowl and then stir it into the sauce to thicken it. This should take about 1-2 minutes.
- Season the sauce with salt, pepper, and paprika. Let the sauce simmer for another 10 minutes until it thickens and smells good.
- In a separate pan, heat the oil or butter and add the gnocchi. Sauté for 5-6 minutes, stirring constantly, until they are golden brown.
- Plate the sautéed gnocchi, pour the mushroom cream sauce over them, and garnish with chives or spring onions as desired. Serve immediately and enjoy!
