  • 2 large eggs
  • 1/4 cup milk (whole or 2%)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Cooking spray or additional olive oil for greasing the baking sheet

Instructions

  1. Preheat your oven to 200 degrees Celsius.
  2. If using fresh broccoli, wash the florets thoroughly and chop them into small pieces. You should have about 2 cups of broccoli florets. If using frozen broccoli, thaw it and squeeze out the excess water.
  3. In a large bowl, combine the prepared broccoli, shredded cheddar, Parmesan, flour, breadcrumbs, eggs, milk, olive oil, garlic powder, onion powder, salt, pepper, and red pepper flakes. Mix everything well until a homogeneous mixture forms.
  4. Grease a baking sheet with cooking spray or a bit of olive oil to prevent sticking and achieve a nice crispy bottom.
  5. Using a tablespoon, take a portion of the mixture and form small balls or flat bites. Place them evenly on the baking sheet, leaving enough space between each bite.
  6. Bake the snack bites in the preheated oven for about 15-20 minutes, until they are golden brown and crispy. Make sure to flip them halfway through the baking time for even browning.
  7. Remove the baking sheet from the oven and let the snack bites cool for 5 minutes. This will help them firm up and make them easier to serve.
