- 2 cups fresh broccoli florets (or frozen, thawed and drained)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 1/2 cup breadcrumbs (preferably panko for extra crunch)
- 2 large eggs
- 1/4 cup milk (whole or 2%)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- Cooking spray or additional olive oil for greasing the baking sheet
Instructions
- Preheat your oven to 200 degrees Celsius.
- If using fresh broccoli, wash the florets thoroughly and chop them into small pieces. You should have about 2 cups of broccoli florets. If using frozen broccoli, thaw it and squeeze out the excess water.
- In a large bowl, combine the prepared broccoli, shredded cheddar, Parmesan, flour, breadcrumbs, eggs, milk, olive oil, garlic powder, onion powder, salt, pepper, and red pepper flakes. Mix everything well until a homogeneous mixture forms.
- Grease a baking sheet with cooking spray or a bit of olive oil to prevent sticking and achieve a nice crispy bottom.
- Using a tablespoon, take a portion of the mixture and form small balls or flat bites. Place them evenly on the baking sheet, leaving enough space between each bite.
- Bake the snack bites in the preheated oven for about 15-20 minutes, until they are golden brown and crispy. Make sure to flip them halfway through the baking time for even browning.
- Remove the baking sheet from the oven and let the snack bites cool for 5 minutes. This will help them firm up and make them easier to serve.
