- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 1 lb potato gnocchi
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried Italian herbs
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Ensure the oil is hot enough to shimmer before adding the chicken.
- Add 1 lb of diced chicken breast and season with salt, pepper, and 1 teaspoon of dried Italian herbs. Sauté the chicken for 6-8 minutes until golden brown and cooked through, making sure not to overcrowd the pan for even cooking.
- Remove the chicken from the skillet and set aside. In the same skillet, add 6 minced garlic cloves and sauté for about 30 seconds until fragrant but not burnt.
- Pour in 1 cup of chicken broth and use a wooden spoon to scrape up the brown bits from the bottom of the skillet for added flavor.
- Add 1 lb of gnocchi and bring the mixture to a simmer. Cook the gnocchi for 3-4 minutes until they become tender, stirring occasionally to prevent sticking.
- Reduce the heat to medium-low and pour in 1 cup of heavy cream. Stir gently and let the sauce simmer for 2-3 minutes until it starts to thicken.
- Add the cooked chicken and 1/2 cup of grated Parmesan cheese to the skillet. Stir everything together until the cheese is melted and the chicken is warmed through, being careful not to let the sauce burn.
- Taste the dish and adjust the seasoning with more salt and pepper as desired. Remember, you can always add more, but you can't take it back!
