Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup warm water (about 110°F or 43°C)
  • 1 tablespoon olive oil
  • 8 ounces fresh mozzarella cheese, cut into small sticks (about 1/2 inch thick)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (such as oregano and basil)
  • 1 clove garlic, minced (optional)
  • 1 tablespoon olive oil (for brushing)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Sea salt (to taste)

Instructions

  1. In a large bowl, mix the flour, instant yeast, salt, and sugar. This should take about 1 minute to ensure everything is well combined.
  2. Add the warm water and olive oil. Mix well with a wooden spoon or your hands until a rough dough forms, which should take about 2-3 minutes.
  3. Place the dough on a floured surface and knead for 5-7 minutes until smooth and elastic. The dough should be soft and pliable but not sticky.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until it has doubled in size.
  5. Roll the dough out on a lightly floured surface until it is about 1/4 inch thick, which should take about 5 minutes.
  6. Evenly distribute the mozzarella sticks over the dough and sprinkle with Parmesan and Italian herbs. If using garlic, add it now.
  7. Fold the edges of the dough slightly and cut into even strips about 1 inch wide, which should take about 5 minutes.
  8. Grab the dough strips in the middle, twist them gently, and place them on a baking sheet lined with parchment paper. This should be done quickly, in about 5-10 minutes.
  9. Brush the bread twists with olive oil and sprinkle evenly with garlic powder, parsley, and sea salt.
  10. Bake in a preheated oven at 200°C (400°F) for about 15-20 minutes, or until golden brown. Be sure to check regularly to avoid overbaking.

Keywords: Avoid over-kneading the dough as it can affect the bread's texture. Use a baking sheet lined with parchment paper to prevent sticking and make cleanup easier. Experiment with different cheeses for the filling, such as Gouda or Cheddar, for interesting flavor variations.
