  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (225g) unsalted butter, softened to room temperature
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • 2 cups (480ml) heavy whipping cream
  • 1/3 cup (40g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups (300g) mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Preheat the oven to 175°C (350°F). Grease two round cake pans (20 cm diameter) and line the bottoms with parchment paper.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt. Mix these dry ingredients well and set aside.
  3. In a separate bowl, cream the softened butter with the sugar for about 3-4 minutes until the mixture is light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then slowly mix in the vanilla and milk.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined. Avoid overmixing!
  6. Evenly distribute the batter into the prepared pans and smooth the tops. Bake in the preheated oven for about 25-30 minutes, or until a toothpick comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then turn them out onto a wire rack to cool completely.
  8. For the filling, whip the cream in a large bowl until stiff peaks form. Add the powdered sugar and vanilla, and whip briefly to combine.
  9. Place the first cake layer on a serving plate. Spread a generous layer of cream filling on top and sprinkle with fresh berries. Carefully place the second cake layer on top.
  10. Decorate the top of the cake with the remaining cream and additional berries as desired. Optionally garnish with fresh mint leaves.
