  • 250 g Pasta (e.g. Spaghetti or Penne)
  • 100 g green lentils (preferably pre-cooked)
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 red bell pepper, diced
  • 400 g canned chopped tomatoes
  • 750 ml vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian herbs (e.g. oregano, basil)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat for about 2 minutes.
  2. Add the diced onion and sauté for 3-4 minutes until soft and slightly golden.
  3. Stir in the chopped garlic and diced bell pepper, cooking for another 2 minutes until the garlic is fragrant.
  4. Add the chopped tomatoes and vegetable broth. Stir well and bring the mixture to a boil.
  5. Once boiling, add the pasta and pre-cooked lentils. Stir well and reduce the heat to low.
  6. Cover the pot and let the pasta simmer for about 10-12 minutes until al dente, stirring occasionally to prevent sticking.
  7. When the pasta has absorbed all the liquid, remove the pot from heat and season with salt, pepper, and Italian herbs.
  8. Serve the One Pot Pasta hot, garnished with fresh parsley.
