This One Pot Pasta with Lentils is a warm and hearty dish that combines the rich flavors of tomatoes and herbs with the satisfying texture of lentils. Perfect for a cozy meal, it’s simple to prepare and packed with nutrients.

- 250 g Pasta (e.g. Spaghetti or Penne)
- 100 g green lentils (preferably pre-cooked)
- 1 onion, diced
- 2 garlic cloves, chopped
- 1 red bell pepper, diced
- 400 g canned chopped tomatoes
- 750 ml vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon Italian herbs (e.g. oregano, basil)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat for about 2 minutes.
- Add the diced onion and sauté for 3-4 minutes until soft and slightly golden.
- Stir in the chopped garlic and diced bell pepper, cooking for another 2 minutes until the garlic is fragrant.
- Add the chopped tomatoes and vegetable broth. Stir well and bring the mixture to a boil.
- Once boiling, add the pasta and pre-cooked lentils. Stir well and reduce the heat to low.
- Cover the pot and let the pasta simmer for about 10-12 minutes until al dente, stirring occasionally to prevent sticking.
- When the pasta has absorbed all the liquid, remove the pot from heat and season with salt, pepper, and Italian herbs.
- Serve the One Pot Pasta hot, garnished with fresh parsley.
