Ingredients

  • 400 g Pasta of your choice (gluten-free if needed)
  • 350 g Silken tofu
  • 70 g sun dried tomatoes
  • 200 g roasted red peppers
  • 3 garlic cloves
  • 6 basil leaves
  • 1/21 cup pasta water
  • 1/4 cup nutritional yeast
  • 1/2 tsp red pepper flakes
  • 1/2 tsp smoked paprika
  • 2 tbsp tomato paste

Instructions

  1. Bring a large pot of salted water to a boil. Add the 400 g pasta and cook according to the package instructions until al dente (about 8-10 minutes).
  2. While the pasta cooks, add 350 g silken tofu, 70 g sun dried tomatoes, 200 g roasted red peppers, 3 garlic cloves, 6 basil leaves, 1/4 cup nutritional yeast, 1/2 tsp red pepper flakes, 1/2 tsp smoked paprika, and 2 tbsp tomato paste to a blender.
  3. Blend the ingredients on high until the mixture is completely smooth and creamy (about 1-2 minutes). Make sure all ingredients are well combined.
  4. Once the pasta is done, reserve a cup of the pasta water and then drain the pasta. Be sure not to forget the pasta water, as it is important for the sauce!
  5. Heat the creamy sauce in a large pot over medium heat. Stir occasionally until the sauce is warm (about 3-5 minutes).
  6. Add the drained pasta to the pot with the sauce and mix well, ensuring the pasta is evenly coated with the sauce. If the sauce is too thick, gradually add some pasta water until the desired consistency is reached.
  7. Serve the dish hot. You can garnish it with fresh basil and possibly some grated cheese of your choice. Enjoy!
