  • Author: Ella
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

These fluffy chocolate chip pancakes are a family favorite that brings warmth and joy to every breakfast. Topped with freshly whipped cream, they are a delightful treat that everyone will love.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar or lemon juice added and allowed to sit for 5 minutes)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus extra for cooking)
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt. Make sure there are no lumps, which should take about 2 minutes.
  2. In a separate bowl, combine the buttermilk, egg, and melted butter until well blended. This should also take about 2 minutes.
  3. Add the wet ingredients to the dry ingredients and gently stir until just combined. It's important not to overmix; small lumps are perfectly fine. This should not take longer than 1 minute.
  4. Fold in the chocolate chips, ensuring they are evenly distributed without overmixing the batter.
  5. Heat a skillet over medium heat and melt some butter in it. Wait until the butter is lightly bubbling before adding the batter.
  6. Using a ladle, pour a portion of batter into the skillet (about 1/4 cup per pancake). Cook the pancake until small bubbles appear on the surface and the edges look set, about 2-3 minutes.
  7. Carefully flip the pancake and cook the other side for another 1-2 minutes until golden brown. Repeat this process with the remaining batter.
  8. While the pancakes cool, prepare the whipped cream by combining the heavy cream, powdered sugar, and vanilla extract in a bowl and whipping with a hand mixer on medium speed until soft peaks form, which takes about 3-5 minutes.
  9. Serve the pancakes warm, topped with the freshly whipped cream and optionally garnished with additional chocolate chips or fruits.

Keywords: Avoid overmixing the batter to keep the pancakes fluffy. A cast-iron skillet ensures even heat distribution and perfect browning. You can experiment with the flour-to-liquid ratio for different textures.
