  • 2 eggs
  • 2 tablespoons milk
  • Salt (to taste)
  • Pepper (to taste)
  • Chives (finely chopped)
  • 4 slices of tomato (thinly sliced)
  • 30 g grated cheese (Gouda or Cheddar)

Instructions

  1. Begin by cracking the eggs into a bowl. Add 2 tablespoons of milk, a pinch of salt, pepper, and the finely chopped chives. Whisk the mixture well until homogeneous, about 1-2 minutes.
  2. Heat a pan over medium heat and add a little oil. Wait until the oil is hot (it should shimmer slightly), which takes about 2-3 minutes.
  3. Pour the egg mixture evenly into the pan and let it cook for about 1-2 minutes until the edges are set but the center is still slightly runny.
  4. Immediately place the thinly sliced tomato on the still runny egg mixture, ensuring they are evenly distributed.
  5. Place the tortilla wrap directly on top of the tomatoes and press it down lightly so the egg adheres to it. Let it cook for another 1-2 minutes until the bottom of the wrap is golden brown.
  6. Carefully flip the wrap with a spatula. The egg should now be set and the tomatoes slightly cooked.
  7. Sprinkle the already cooked side of the wrap with the grated cheese. Cook the wrap for another 3 minutes until the cheese is melted and the bottom is nicely crispy.
  8. Fold the wrap in half and cut it in two if desired. Serve hot and enjoy immediately!
