Instructions

  1. Prepare the ingredients: Peel the white asparagus, cut it into 2-3 cm pieces, and finely chop the onion and garlic. This should take about 10 minutes.
  2. In a large pot, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent, making sure it doesn't brown.
  3. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  4. Add the asparagus to the pot and sauté for 2-3 minutes until slightly tender, noticing its color change and pleasant aroma.

  7. Begin adding the broth gradually: Add one ladle of broth and stir continuously until the liquid is almost fully absorbed. Repeat this step until the rice is al dente (about 18-20 minutes), ensuring the heat is not too high to prevent burning.
  8. Once the rice reaches the desired consistency, remove the pot from the heat. Stir in the remaining butter and grated Parmesan until well combined and creamy.
  9. Season the risotto with salt and freshly ground black pepper to taste. If desired, add the lemon zest for extra freshness.
